Vegetarian Tofu Fajitas

The past two weeks or so I've been cheating A LOT when it comes to my healthy eating habits (not horrriblyy...but not as healthy as I should have been). And so I was actually feeling a little guilty about it! It can be really hard to eat healthy when you are super busy with school, work, your social life, and everything else under the sun! I'm sure many of you can relate, but don't let it stop you from eating right, and don't beat yourself up when you get a little off track. It is really easy to turn back around!So instead of making excuses, I just forced myself to get back to my healthy eating habits. This recipe was a superrrr easy, quick and tasty way to contribute to them! As I've said before, I'm not vegetarian--but I do try to eat meatless most of the time. This was actually my first time cooking tofu and if I must say myself, it came out really good! Lol but if you don't like tofu you can add chicken! So try it out and let me know what you think!!!21Ingredients:

    • 1 green pepper
    • 1 red pepper
    • 1/2 onion
    • 2 cloves of garlic
    • 6 oz extra firm tofu (or lean chicken)
    • 1 1/2 tbsp fresh cilantro
    • 1/2 tbsp coconut oil
    • 1/4 tbsp Adobo
    • 1 package sodium-free Sazon
    • 2 spinach tortillas (or whole wheat)
    • black pepper to taste
    • sea salt to taste
    • dask of red cayenne pepper
    • squirt of lime (optional)

3Step 1:Chop peppers, onion, tofu, garlic, and cilantro.

      • Cut the peppers and onions into thin slices.
      • Cut the tofu into small squares. I cut mine into all different sizes. It all depends on your preference
      • Finely chop the garlic and cilantro

4Step 2:Heat coconut oil in a pan for about 2 minutes and then add the chopped ingredients from step 1.Step 3:Add the Adobo, Sazon, black pepper, sea salt, and red cayenne pepper to the pan. Mix and let sit for about 10 minutes on medium heat, stirring occasionally. Then cover and keep on low heat for 5 minutes or until the peppers soften.Step 4:Microwave tortillas for 30 seconds and then place the ingredients from the pan evenly onto each one. Before you wrap them, squirt a little lime juice, and vuala!!! (pronounced vwala for those of you who don't speak french. Jk I don't either) Delicious, healthy, fajitas! Enjoy!
